Climax Launches “Moonshot” Products as It Attacks the $800 Billion Dairy Market

Climax (www.climax.bio) is launching its first “zero-compromise” plant-based products for a limited audience in Los Angeles, New York, and San Francisco after two years of intensive research and development. At the same time, the company is setting up production facilities in preparation for an early 2023 launch with a small number of distribution partners that will be made public soon.
Climax’s “moonshot products” are cultured and aged Blue, Brie, Feta, and Chèvre cheeses that mimic the flavour, benefits, and cost of dairy cheeses while using sustainably farmed plant ingredients.
Climax, an AI/Biotech startup backed by venture capital, enters the $800 billion market by introducing a new line of plant-based dairy products.

Dr. Oliver Zahn, the company’s founder and CEO, explains that “we began with a genuine admiration for the varied flavours and textures of dairy products.” “Our milk has been produced by cows for thousands of years. In today’s far more populated globe, however, less than 10% of the plants they consume get converted into food for people, which has resulted in serious environmental and health issues.” Zahn goes on, “Humans have a tendency to reconsider traditional methods, therefore we came up with a better solution. We can currently produce goods that are equally as tasty as their cow-based ancestors without the drawbacks by leveraging data analytics to speed the discovery of plant-based ingredients and processes.”
